Our Dario Estate is a blend of our low yielding fruit harvested at peak ripeness using old world winemaking practices that include gentle handling, gravity transfer, and lees aging in neutral French Oak. The result is a Classic Oregon Pinot Noir with black cherry notes, earthy flavors of smoke and white pepper wrapped in firm tannins and a long silky finish.
Tasting notes from Ksenia Caron, Wine Educator and Dipl. WSET
“I love the bright juicy sour cherry nature of this wine. I value the pure fruit character of wines and appreciate when they are not overly influenced by the barrel treatment - this wine clearly exhibits that. I also enjoy the floral rose hips and fresh rose components. The tannins are perfectly ripe and silky. It is a very vibrant wine, which makes it perfect to pair with Italian food that we enjoy very much, like a simple pasta dish with tomato sauce. The bright acidity of the wine will go well with tomatoes. It will also pair well with cured meats like a thinly sliced prosciutto. I love this wine”
